Thought I might update this thread, so anybody finding this later on has some comments on everything, and know how much this thread has helped me, and hopefully will help somebody else later on.

Again, cant thank anybody enough for the contributions. We did so many of the things people here said we should do, the Staten Island Ferry, The high line park, the gallery openings and all of that. We could have easily spend another 10 days there. I just wanna state some of the things I think is worth checking out besides what everybody else in here said, because everything in this thread is great advice and makes for a great trip.

The first thing we did was taking one of the Circle Line cruises, best money spend on touristy shit I guess. Perfect with a 3 hour cruise around Manhattan while getting the jetlag out of the body and so. Nothing beats just chilling on the water. Even the guide wasn't annoying or anything, so definitely worth the money. We still did the Staten Island ferry at night though. The whole Circle Line thing seems touristy and wack, but it made for a great first day after traveling 12 hours or so.

We went to The Met, which was amazing. The best thing about it though was the roof-top bar thing. We had like 36-38 degrees celsius (maybe 90-something in fahrenheit) so being on a roof was a nice break. They had lots of different great non alcoholic lemonades and stuff, to which you could buy a shot of any-alcohol and add to it. Super great scenery of the entire central park and the surrounding city. Seriously, do this! Its not even crowded since the elevator up there is kinda 'hidden' and you can only access it from one elevator.

We ate at this Indian restaurant at 1st ave close to Astor. Its name is Banjara, it was nominated for some michelin stuff too. It was rather cheap, best indian I ever had and they had free mango icecream for dessert for free. (skateboarders love free shit). Amazing place.

Another place worth visiting is the Soup N' Burger at broadway around the same area. Might just be the cheapest meal at a dinner there, while also being the best. http://cozysoupnburger.com/

Skatespot wise I was lucky to get a hook up from a Slap Pal and getting showed around a bit. Skating around is definitely the way to go. So stoked on the trip there, and lots of thank yous to the Slap Community. They hooked it up for sure!
