Does anyone have any experience spray painting shoes? I could use some advice, what kind of paint to use, etc... I have some canvas shoes that I'd like to black out.

I just used that 99 cent stuff from wal mart

if you want to cover the vans stripe, swoosh or whatever use duct tape all over it then cut out with a razor and rip off everything else leaving tape over the part of the shoe you don't want covered or the midsole
I recommend doing it on a sunny day and if you can like coat the shoes with paint, leave for an hour or two come back and coat it again a couple of times

nothing's been the since same

Buy some black leather dye. Can be had at pretty much any boot repair shop.  Works on any material and black is highly prominent among color choices.

I've spray painted a ton of shoes over the years.  I find that masking tape works the best, you can manipulate it the easiest, any spray paint is good sparay paint, just don't hold it too close, it'll cake on and look heavy.  Short shots at kind of a distance are the key.
