My mom makes a fantastic spaghetti carbonara. She makes it with pancetta, which can be controversial but her's comes out delicious!

Pancetta isn't that controversial is it? Pretty standard sub I thought.

It's when cream gets in the mix that things get controversial.

Oh for sure, I have seen people complain about it but it's far from being one of the bigger points of contention in making Italian food

Where I live now, I'm not even sure I can get pancetta in shops, let along guanciale... but am craving carbonara now.

One of my favorite quotes has always been, "What you got back home, little sister, to play your fuzzy warbles on? I bet you got little save pitiful, portable picnic players. Come with uncle and hear all proper! Hear angel trumpets and devil trombones. You are invited."

Why just today I posted a reel of my 2 year old daughter playing with a soccer ball at the park, but edited to/accompanied by Wendy Carlos' Moog version of the "William Tell Overture" (from the soundtrack).

Seriously. Everyone knows farfalle aka bow-tie aka butterfly pasta is mid at best. It’s usually inedibly hard, even when cooked longer. I can get behind penne and spaghet being S tier though.

Yep, I agree. I’m a huge fan of the soundtrack as well. Along with Kraftwerk’s career (mainly from Autobahn to The Man-Machine), it inspired pretty much every founder of Synthpop and Industrial music. Wendy Carlos was definitely the Moog synthesizer pioneer and hasn’t really been surpassed because very few people have the same access to those extensive modular systems, the rigged polyphony, etc. If they do, they don’t seem have her musical training, understanding and talent.

I don’t recall that Hook-Ups board, but I was never a fan of Birdhouse/Hook-Ups. The yellow fever thing seemed like pretty much every Klein graphic after a certain point. I’ll have to look it up. I do remember Jim Greco wearing A Clockwork Orange t-shirt in some of his earliest footage. (Maybe from Asian Godess?) As much of a mimbo he was during the 00’s, he’s always seemed to have pretty decent taste in movies. He just put out a really sick Hammers board graphic that’s based around stills of Pierre Clémenti from Bell du jour (1967).

You all propping up these big corporation processed mac n cheese brands which the culture does not need.  So what once every year kraft or annie's make a super bowl commercial of the same trick over and over of fast and convenient cooking .  They don't deserve that place in the our culture.  Kraft and annie's acting like they deserved their spots as the best, fuck that.  Go make your own homemade mac n cheese and bake that shit

Idk what called but been making this  - ideally with spaghetti noodles - regular tomatoe basil sauce , add anchovies, capers and kalamata olives n cook it with noodles in pan after boilin noodles - it really good. Was in Milan for a few months last year and they had this pizza called “Romano’s” with the same toppings it how I got the idea.
