Rotini noodles are my favorite cuz u can use uncooked ones as great spliff/ joint filter. Idk what called but been making this  - ideally with spaghetti noodles - regular tomatoe basil sauce , add anchovies, capers and kalamata olives n cook it with noodles in pan after boilin noodles - it really good. Was in Milan for a few months last year and they had this pizza called “Romano’s” with the same toppings it how I got the idea.

I made an absolute banger of a creamy mushroom pasta sauce tonight.  Super easy and hugely delicious. 


Pop on your spaghetti
Fry your mushrooms in some butter & pepper tilll golden brown
Chuck in some minced garlic for the last minute
Put em aside.
Drain your spaghetti 2 minutes early, v al dente.
Same pan, pop some butter & flour in & get it goin'
Pop in a cup of milk
whisk it tilll its smooth
chuck in the pasta
chuck in the mushrooms
cook it down a bit
chuck in some parmesan
salt
fuckin' banger.

That stuff is super good, you let the anchovies disintegrate in the pan and you never would even know they are there but they really bring the flavor.

Yeah, that sounds good as fuck. I love lemons and I love simple sauces on good pasta.

A lovely mushroom cream sauce or pesto is hard to beat so this would be in that same category and I need it in my life.

I found that using butternut squash as a purée with some water from the pasta together with some smoked tofu and Kala namak (for the egg flavor) a super easy and quick vegan carbonara substitute

a lot of people never heard of it. which often results in misunderstanding people who suffer from it, and even people not getting diagnosed.
for some reason mac and cheese is one of the few foods most people suffering from ARFID will have no/less trouble eating.

Miso works super good in vegan/vege pasta. A little white miso, mixed up with some water will mimic fatty/salty umami.

Also I couldn't work out what I wanted my partner to cook for my birthday, until reading this thread. She's makin carbonara - we even mail ordered guanciale and pecorino, and she'll handmake the pasta.
