Been really fuckin with making breakfast sandwiches and this was easily the best one:
English muffin
Overeasy egg in the cast iron
Mild cheddar
Turkey bacon
Natural peanut butter top muffin
Red pepper jelly bottom muffin

Wrap that bitch up in foil after so it steams up nice before you eat. And trust me on that pbj combo

Cut up capsicum and onion and carrot small put it in frypan with some olive oil. After like five mins put in some beef mince, smash it up, flip it as needed. When that's done throw in a can of corn kernels (drain the water first) and can of chilli and bunch of cheese. Mix it all up. When cheese is melty put it on a plate. Eat with packet of nachos.

Or instead of can of chilli do can of tomato and instead of nachos cook some pasta. Or gravy with mash/whatever cooked potato/sweet potato. Such an easy meal basically been doing it since I was ten.

French bread pizza is super simple, cheap and was one of my go to's when I started cooking for myself.
The trick though is slicing thinner slices of the bread so it goes further.  Some people just slice the thing right down the middle and call it a day, but the bread to toppings ratio is way off.  You can feed a couple of homies if you do it right.  One thing to keep in mind is if you plan to load it up with a lot of toppings, toast the bread for a few minutes before putting the sauce on so it doesn't get all mushy.

Smoothies man, start your morning off right. Easy as hell and frozen fruit is cheap-ish. Just buy Bananas once a week and throw some PB in there for your protein and fats. Nothing is easier than filling a blender with stuff and pressing a button.

A pressure cooker / Instant Pot is a great entry point to cooking for yourself. Easy to cook a batch of food for easy meal prep and the process is mostly idiot proof.

Shit, this is my kind of thread. Been cooking more and more lately and I'm loving it.

My favorite simple breakfast recipe is the tried-and-true breakfast sandwich. 3 eggs fried hard (seasoned with salt, pepper, onion power, paprika, and kimchi kick), 4 pieces of vegetarian bacon, and two veggie sausage patties. Throw it all on your choice of bun or wrap, add a slice of cheese, too, and there you have it. Simple, filling, and nothing that'll leave you feeling too heavy to function.

Not full meal but somethig I do couple times a week since forever. Cut up carrots, potato, sweet potato, pumpkin. Peel some onion maybe cut in half or quarters. Turn on oven to 200. Get an oven tray put baking paper on it put it next to stove. Get a saucepan with lid put in some olive oil, maybe some honey, salt, pepper and whatever spices you like put it on the stove for a min or so. put in some of the veg. Pick it up, hold the lid and shake the fuck out of it. Take the veg out put on tray, repeat as needed. Leave the onions in the saucepan tho. Put tray in oven for like a half hour. Come back and put onions on tray and put back in oven. About twney more mins and you have roast veg.

Everyone's got different tastes and different setups tho so you'll have some trail and error of what size to cut veg, what times to do and what temps. Smaller size veg and higher temps will obvs cook way faster but risk of burning way higher.

My dad used to make me “Sports Sandwiches” when I was a kid.  Piece of bologna and piece of American cheese rolled up.  He said the Baltimore Orioles are them before going out on the field and I was a dumb kid and believed him and savored these special Sports Sandwiches.

that's like the Wish Sandwich, 2 pieces of white bread with ketchup, wish you had something between.

but hey, on the smoothies, watch out with the Pnut butter. Even with the no-additive shit, the fats can end up being a lot. I love pnut butter, I can eat it by the spoonful, but have since backed off to the no-additive peanut powder. easier on the digestion. 3 scoops peanut butter powder, 2 brown and frozen bananas (super cheap when they're on the way out), some frozen cherries, lion's mane mushroom powder, blend and call it a day.

Grab some lettuce, veggies, a cooked rotisserie chicken, and some of your favorite dressing.

Salads with chicken are my go-to lunch during the work week.

And they take like 5 mins to make.

Or go frittata, similar ingredients just cooked differently. You can cook a larger portion and have it throughout the week, reduces the need to cook and clean multiple times.

Really helpful book if you want to up your cooking game, if your dishes are feeling 1 note its because one of these elements is missing. Especially for salads, you'll be amazed how much toasted bread crumbs with olive oil, sunflower seeds or almonds can transform the dish.

Helps frame your thinking while prepping meals so you aren't eating homogenous slop all the time.

Easiest of easy. Put some pasta in a saucepan with water. Cut up a carrot and onion throw them in too with some frozen corn and peas.  Boil it for 10-15 mins. Drain water throw in some salt,pepper,whatever spices and some shredded cheese or some cheese singles. Maybe rip up a slim Jim into pieces if you got it and add that too. Stir it all up and you got my Mac and cheese recipe (from someone who's never had proper Mac and cheese)

Big fan of greek salad because Iove feta and olives. It's easy and great for hot summer days when j don't feel like cooking.

I also can recommend homemade hummus, even without tahini just blend some chickpeas, garlic and lemon juice and eat it with some pita or pide and pickled veggies.
You can get creative if you add some tomato or paprika paste or even some cooked beetroot.

A simple but awesome dish I found is a stew/ soup made from grilled/ baked red bell peppers. Just cook the grilled and skinned peppers with a can of tomato sauce/passata, add a can of chickpeas and a can of tuna, don't forget spices (smoked paprika is a must!), and some fresh herbs. Best shit ever

"Simple" seems to be a a pretty subjective and relative term when it comes to recipes.
So far our "simple" range has peanut-butter and saltines on one end of the spectrum and chicken cordon bleu on the other.

IMO, a truly simple recipe meets the following parameters:
1. Minimal time spent sourcing ingredients
2. Minimal cost of ingredients
3. Minimal prep time
4. Minimal room for error while preparing
5. Minimal clean-up time
6. Maximal satiety

My go-to simple post-skate recipe hits all of the above and leaves plenty of room to riff on and spice up to your flavor preference.

Lin Thizzy's Beanoa:

Ingredients:
2 Cups water
1 Cup quinoa
1 Can (15oz.) of beans
1/2 Cup dry roasted and salted peanuts (or any type of nut/ seed you prefer)
Hot sauce to taste (my go-to is sriracha)

What you'll nee:
Heat source (gas burner, electric cooktop, etc.)
One or two-quart pot with lid
Measuring cup
Can opener
Fork or spoon

Preparation:
Bring 2 cups of water to boil in pot
Add 1 cup of quinoa to pot
Reduce heat to low and set timer for 15-minutes
After 15-minutes the quinoa is ready
Turn heat source off
Open can of beans and drain bean water
Add beans to pot with quinoa
Add 1/2 cup of nuts to pot with beans and quinoa
Stir quinoa, beans and nuts to combine all ingredients in pot
Serve in separate bowl
Add hot sauce to taste

To maximize the simplicity of this recipe, skip the separate bowl and eat straight out the pot, and store leftovers in the fridge in the same pot.

I do this a lot with all sorts of vegetables, and it is so easy and delicious. My one addition would be don't go easy on the olive oil, really coat em.

I read somewhere awhile ago that baking in olive oil is the healthiest way to do vegetables as it retains the most nutrients.

Pasta and Tuna

1 can of tuna fish
1 sweet red Pepper plus cherry tomatoes if you feel like it
1 onion
Any pasta you enjoy
Thyme or basil, oregano is good too
Serve with Parmesan cheese


Put some pasta into hot water and boil it. While you cook the pasta, put a generous amount of olive oil in a pan and heat it up until it smokes a little.Cut the pepper in small peaces and fry it for a a few minutes in the pan. Add halves of cherry tomatoes. Lower the heat and add a minced onion. Let it fry on low heat for 5-10 minutes. Rinse your tuna and put it in the pan. Put in your spice of choice plus some salt and pepper. Mix in your pasta and you are done!

It is cheap and fairly healthy.

Variation on above tuna pasta by @S.

Turn on oven to like 180c
Saucepan #1 put in dry pasta I recommend spirals, elbows, tubes not so much long spaghetti. Cut up and onion, carrot, capsicum if you like it soft throw that in too, if not put it aside for now. Boil it for like 15min/ till pastas soft.

Saucepan #2 put in can of tuna, kidney beans frozen or can peas and corn kernels(drain the liquid from all cans first) and all the other stuff you already cut up. Put in some butter and salt, pepper, basil, oregano whatever and either a can of diced tomatoes (or cut up some tomato's) or a jar of whatever pasta sauce. Put it on low and just stir it all up. 

When saucepan #1 is done drain it and put the pasta etc into an over dish thing. Tip saucepan #2 on-top of that. Cover it in whatever cheese and put it in the oven for like twenty.

Can't say it's that healthy, altho it's mostly just tuna with vegetable but it's cheap and easy

While we’re talkin tuna.. if you want a much cheaper/quicker/easier/healthier version of ground beef nachos, used seasoned canned tuna instead.  I’m not even crazy about canned tuna but in this case it really works and tastes almost as good as the real thing.

Tofu Nugz

-Extra Firm Tofu
-Olive oil
-Braggs Liquid Aminos
-Nutritional/ brewers yeast (Big flakes)
-Some fancy Ketchup/ Mustard

-Cut Tofu into cubes and soak in the aminos ( I find the whole thing works better if the cubes aren't too small)
-Roll the cubes in Nutritional yeast
-Lightly fry in Olive oil, rotating all sides. I like a crispy seal but not burnt.

Recommend eating with some baked broccoli or kale  (baked in olive oil and garlic) or a Spinach based salad. You want those dark green leafy vegetables.

Vegan Tuna Salad Alternative

I make this almost every week and it covers my lunches for the entire week.

14oz Extra Firm Tofu (Dry with paper towel, then start dicing it up in a glass mixing bowl)
1/2 Cup Vegan Mayo (Add to tofu, mix around a bit)
Dijon Mustard To Taste (I add quite a bit for a kick)
1/2 Can Black Olives (Dice and toss in bowl)
6-8 Baby Dill Pickles (Dice and toss in bowl)
1/4 Of An Onion (Dice and toss in bowl)
Garlic Powder To Taste
Turmeric For Color & Health

That's the base recipe but I like to mix it up once in a while. Some great add-ins I've tried are diced Giardiniera, pickled carrots, spicy pickled Brussels sprouts, yada yada yada anything to add some of that tasty deli vinegar kick.

Yields about 4-6 sandwiches depending on how liberally you spread it on.

Not so much now, but in my college years I used to make ghetto beignets (they don't come out quite like legit beignets, but they taste like 'em, and will handle you up on a sugar and very bad ingredients rush).

Being a South Louisianian, I'm contractually obligated to own a deep fryer... so you'll need whatever else in the kitchen can do the same as a deep fryer.

Things Needed:


Heat up the deep fryer and wait until the oil is fully heated.

Take all of your raw biscuit discs and rip them in half or in quarters (try both to see what you prefer).

Slip those bitches into the fryer (usually a few loads in most kitchen fryers out here), and keep an eye on them so that they don't cement themselves to other pieces of dough. They get bigger, so keep that in mind. Fry them and flip them over until everything's a good tan to almost caramel color.

Take them out and let them drain, but don't let them get cold.

Double-bag your two paper sacks, then dump all the powdered sugar you own into the eager, gaping maw.

Throw in as many of your fried chunks into the bag as you feel comfortable tossing in... I'd probably do it in 3 or 4 batches, as the next step is rolling the top of the bags down and shaking what god gave you.

If they aren't drained right, the sugar will cake up and you'll feel even more gross than you're going to feel after too many. Having said, I like a bit of a sugar kick for my initial boost (+ caffeine and supplements to counter a potential sugar crash).

If you can go from fry to powder within 10 minutes, they'll be perfect.

Chef John from Food Wishes is the best Youtube chef and I will never change my mind.

I like his recipes but the cadence of his voice sounds like he's riding a rollercoaster while narrating.

Yo what’s the trick to flame grilling sardines right in the can?  I’ve seen multiple euro skate tour vids where they do this, but I can’t find a recipe online.  Do you just hold a flame to it and the oil acts as flammable?  Or do you need a certain type?

I have celiac disease (allergic to gluten) so there are not many foods i can actually make quickly.

Lately my go-to meal has been fried potatoes and sausage with an egg on top. I cut up a couple of potatoes into small cubes, and add it to a fry pan with olive oil. I fry them until they are soft, then add a chopped up pork sausage and some salt and herbs to the pan. I fry that up until the sausage is cooked. Then I take it out and add it to a bowl and add a sprinkle of cheese on top and a bit of hot sauce. While I'm doing that last step i fry up an egg, then when the egg is done i put it in the bowl on-top of the potatoes and it's done. Lots of calories and fairly cheap.

Yo what’s the trick to flame grilling sardines right in the can?  I’ve seen multiple euro skate tour vids where they do this, but I can’t find a recipe online.  Do you just hold a flame to it and the oil acts as flammable?  Or do you need a certain type?

It works really easily, just get the sardines that are packed in oil, not the kind in mustard, tomato sauce, or hot sauce. Put the napkin on top, let it soak some of the oil up, and then become the arsonist that you've always yearned to become.

Chickpea croutons. Cook canned chickpeas in a little oil till they get crunchy, then throw on a bunch of lemon juice and soy sauce. The soy sauce will create a carmelized layer and that’s how you know they’re done. So simple and so good.

Easy street tacos

I don’t know if this will translate to overseas but I’ll try

Marinated lime chicken skewers from a deli, strip them off the stick into a pan, heat them for 5-8 minutes until they look cooked.

In the mean while mini flour tortilla in the oven or microwave just to heat them up for a minute.

Pre made pico de gallo salsa from the store on top.

Quick and cheap for something id be paying $16 from a Mexican take away place

An easy lunch i do regularly:
Cook up some jasmine rice, usually have a batch in the fridge each week. Toss some in a bowl.
Fry up an egg or two.
Add a pile of kimchi.
Chop some green onion
Sprinkle sesame seeds if you got em.
If you have any meat like spam or turkey bacon toss that in

Good easy shit

Get a few nice hard savoury crackers, butter them with Nutella then grind like half a gram of weed on top of 2,3 crackers

Grill or oven very lightly just enough to decarb

An easy breakfast that I've been doing for months now:
Take a spring roll wrapper, those dry circular sheets, and toss it into a dry pan at medium low heat. Cast iron works best.
Do a spoonful of chili oil spread across the wrapper
Crack an egg in, some chop sticks to scramble it around and spread across the whole wrapper
Toss in some green onion, if you have cilantro add that too
If you have Parmesan cheese to grate I'll add a little
Then drizzle a mix of Sriracha mayo across the whole thing, I usually add a tiny splash of water to dilute the sauce beforehand.

By this point the egg should be mostly cooked.
Fold the whole thing in half and let it sit in the pan until its nice and crispy. I'll usually flip it a couple times before being ready.

When done just cut in half and you're good to go

If you have two spare egg whites and don‘t know what to do with it, mix it with a ripe banana, a pinch of salt, a tsp of cinnamon and fry it up as a pancake. Ideally use coconut oil. Super delicious and easy, just watch out not to burn it.

Air Fryer breakfast potatoes:

4-6 potatoes (depending on size), cut into cubes
1-2 tablespoons of butter, melted
1 chopped bell pepper
Salt and pepper
Fresh rosemary (I just gather from around my neighborhood and backyard and dry it out in brown bags)

Toss all ingredients together on the tray. Don't chop too many potatoes or else it would cook as well. Large chunks of potatoes take longer to cook and don't get as crisp and pieces between ~5-10mm in size. Set the air fryer to 410f, cook for eight minutes. After eight minutes, remove and mix everything else. Back in for another eight minutes, repeat that process. Back in one final time for ~5-6 minutes to roast all the final edges and make sure everything is thoroughly cooked.

Serve with scrambled eggs.

Here's one I used to do pretty regularly. Just a basic sugar cookie recipe, and I didn't even bother with baking soda or eggs, just butter, sugar, and flour (I think, I could be wrong. Basic sugar cookie recipe.) Eyeball it and mix that shit up, to taste. Make sure you taste it constantly. And keep tasting it. When you've finished tasting the first bowl, make a second bowl and make sure it tastes as good. Dump it into a ziploc bag and cut one of the bottom corners off. Now you have a piping bag. Squeeze out dime to penny sized portions onto a cookie sheet (I'd use parchment paper) and bake at 350 or so until they brown a little. Shouldn't take long, maybe five minutes. Let cool thoroughly while making sure to taste as much as you can. Make a whole bunch more. Put in a bowl and pour in milk and you're having pretty damn good cereal. If you're feeling adventurous you can add chocolate chips. Pulse them in a food processor or put them in a bag and pound the fuck outta them with a mallet or a brick or whatever you got.
