Got a farmers market? Go to it and pick up some good seasonal veggies. Chop em up, hit em with some evoo, and s+p, roast em in the oven for a half hour or so around 400-425f turning things halfway through. Do the same with tofu but press and strain beforehand, maybe marinate the tofu first to up the flavor. Cook up a pot of rice or quinoa, grab a can of beans, dump it all together with the spices of your choice and you've got a few meals cooked.

not a recipe, but a tried and true recommendation for working with tofu in any number of awesome vegan dishes--purchase and use an air fryer to prep your tofu, it works incredibly for a crisp texture without being all greasy. there is always a container of prepared tofu blocks in my fridge waiting to be used for all kinds of dishes. also, as dave says above, you need to be sure to press and strain beforehand--i'm yet to find a better way than a tight container/lid and tofu wrapped in paper towel. i've found this particular "super firm" tofu works the best here, and strains the quickest--i've only seen it at Meijer's (here in the midwest), but i'm sure it's everywhere:

Chickpea Dahl is pretty good and kofta balls with that red sauce shit, they’re my fave vegan things. You three posted good ones

Easy three recipe pancakes:

1 ripe banana
2 cups of quick oatmeal (or 200g)
1 1/2 cups of plant milk (or 375 ml)

Vegetable oil of choice for cooking ( I prefer avocado or olive oil, spray if you've got it).


Blend three ingredients until smooth, you can use regular blender, I've got a Nutribullet, job is quick.

Heat some oil (about one table spoon). Pour about 1/4 cup of batter, or however big you want the pancakes to be.

Cook about two minutes on each side. Adding oil as needed.

Top with whatever you want, fruit, syrup, agave, butter, whatever. Cheers.

I’m out of the loop these days...
Luckily my wife is the best vegan cook I know but I did buy “eat like you give a damn!” a few years back and it has some nice staples in there

I fuck with Minimalist Baker, Hot For Food too. This lady has an awesome vegan cooking blog with banging recipes called Rabbits and Wolves.

Try her “steak” Diane meatballs. That sauce is boss.

IMO, the best vegan dishes are the ones where you aren't trying to substitute meat with some random veggie. Like seriously? A carrot in the place of a hot dog? Shit's fucking ass.

My go-to: Yam Bowl that takes less than ~35 minutes.
Sweet Orange Yam Cubes - Peel a yam, cut into cubes. Oven 425 ~14 minutes each side.
Quinoa - 1 Cup + 2 Cups water. Wash quinoa first. Bring to boil and then put on lowest heat for 20 mins.
Can of black beans - heating optional
Cashews
Avocado Slices
Kale - cut into shreds
Tomato - slice a few cubes
Sauce - I like tahini.

I’m very routine/regimented w my diet. Pre-COVID I would go to some vegan/healthy cafe pretty much every morning for breakfast. For the past couple months almost every morning I’ve been making some variation of:
Brussels sprouts chopped into like thirds or quarters depending on size, pan fried over medium high heat in olive oil, balsamic vinegar, and black pepper. After a few minutes I toss in some almonds, pumpkin seeds, and chia seeds. If I have it I’ll put in soy sauce. While that cooks I’ll boil water and pour that on some dehydrated refried beans or lentils. Once the Brussels are getting a little crispy I push them to one side of the pan and pour the beans in the other and let that cook for a couple minutes and blend together a bit. Usually I’ll pour a little too much water on the beans and then let that boil off. Then I just dump it in a bowl attempting to get the Brussels on top. Looks a little swampy but I’m hooked on it.

Anybody have any awesome recipes for some delicious vegan nacho cheese sauce?

I have one that I found online that's a great consistency but not the most flavorful that I've had.  I wanna get a few different methods and try to frankenstein some ultra-hot cheesy sauce.

The pasta is a pain in the ass. The rice and soup were fire though. For the risotto, i just used regular mushrooms and added beyond sausage and carrots. If ur lazy like me tho, I'd stick to tofurkey sandwiches. I also like making refried beans and spreading them on a flour tortilla fresh off the comal with salsa verde. I mainly be fucking up smoothies and bagels with random condiments for breakfast and eat hella fruit. Cashews come in clutch too.

I don't measure anything but BBQ pulled green jackfruit is the bomb. I could write out a recipe if you need but just slow cook it with onions and garlic till it's super tender then add pineapple/peppers whatever and make your BBQ sauce. I just use ketchup, soya sauce, liquid smoke, some brown sugar, and some Tabasco sometimes I add a bit of Jameson but you don't need it. Most folk would use Jack Daniel's but I'm allergic to it.
Slap that in a bun with some vegan coleslaw and some potato wedges on the side.

i've been making tofu scramble hashbrown burritos almost daily. if you guys dont own any black salt (kala namak) you def need to buy some. it tastes exactly like egg, it's pretty crazy

I make this smoothie almost everyday.
2 servings of frozen berry mix
Spinach(swapped out with other greens here and there)
1 tomato
carrots
chia seeds
unsweetened almond milk.

When I'm in a hurry and need a bite to eat quick I put hummus on a tortilla and add broccoli and a chopped up tomato.

I cook some random stir-fry type things with tofu, but I have issues with cooking my tofu.  Going to spend more time squeezing the water out and going to try air frying it next time.
