Sourdough toast w coconut oil, nutritional yeast, braggs aminos, guacamole, pepper sauce, and egg (usually do 2 eggs)

Sourdough toast w peanut butter and rhubarb jelly

this may be controversial but frying up some spam for spam and egg bowls is one of my favorite easy weeknight meals. Rice, furikake, spam, scrambled eggs, kewpie mayo and sriracha. so good

frying bell peppers (and onion if you please) in the cast iron and roasting them under the broiler is my new favorite way to prepare them

made some chicken fajita/taco salad hodgepodge with one of those whole roast chickens fromt he deli. fried the peppers down with some onion and mushroom, shredded some chicken and threw it in, added seasoning and some water, roasted the shit out of it for like 10 min.

I've been fucking with this Enchilada Caeser salad mix so that was the salad base. Fam loved it enough there was no leftovers

Hell yeah I like the toasty top and agree I probably would skip the bacon for a more casual enjoyment of the dish. How'd you like spinach? Definitely a welcome addition for me anyway

Didn’t try it with spinach but I could see how it would work with all the flavors going on. Wanted to try the recipe first in a basic manner to see if I could pull it off. Definitely something I will make again

I like to cook spinach into a marinara with pasta for some extra nutrients.

Threw together some half rate almost enchiladas. Gotta add mondo milk to the refried beans, pepper sauce as well. Some quick and cheap canned chicken seasoned with paprika, cayenne, and chipotle chili for the lady in the #3.

simple thai larb with cabbage is a regular dish in the cast iron for us. pretty healthy and quick to make. cutting up peppers, shallots, onions, and herbs takes the most time
