My girlfriend sent me a recipe a few months ago on tha ‘gram for “Easy” vegan Cream Cheese Crumb Cake.

I wouldn’t call it easy - too many steps & special ingredients with the vegan-ness. But! I made it just because and it turned out super well. On to my second slice and I need a glass of milk.

Cajun seasoned chicken breast, roasted sweet potato, romaine lettuce, with a little shredded Parmesan and Italian dressing on a high protein tortilla wrap.  Just over 500cals, trying to slim down and clip up before time changes and it’s dark at 4pm.

Made chicken stock from the bird I broke down earlier this week. Simmered the bones and carcass for a few hours, added some garlic, buffalo sauce, black pepper and Tony Cachere's creole seasoning. Turned out awesome! Ready to make a dank fuckin soup

Buying a whole chicken is so much more cost effective, probably gonna do that more often

Had a package of ready to eat noodles with tomato sauce. One of those package where you only have to pour it into boiling water, stir, and wait for 5 mins. Wasn't that bad.

That looks excellent. What cut of beef did you use and how did you cook it? I made Italian beef recently and the meat dried out. I used top round and simmered it in stock for 4 hours.

My dinner tonight was tight. I made a Cesar salad and instead of falafel balls I added tater tots. I swear it had the same mouth feel as a falafel salad.

I used London broil from Whole Foods. I seasoned the meat with oregano thyme salt pepper red pepper then seared it. In the same pain I then added water onions and red wine then put it in the oven for one hour. Took out the meat then put it in the freezer to be able to slice it for 2/3 hours since I wanted to eat it that day. Blended the liquid then strained it seasoned it a little more then once the meat was ready I rehydrated it in the liquid for an hour til it basically shredded on its own. If the liquid is too seasoned just add water it doesn’t dilute it. Used a Portuguese roll and then hot peppers from potbelly for the sandwich assembly.

Thanks for the play by play. My stock was really nice. Found a recipe that called for a full jar of pepperoncini to be added in the bone broth plus a good amount of paprika to build the base after the searing of the beef. I do all my cooking in a Dutch oven and after I made the broth I cover the top with parchment paper and placed in an oven at 300 F for 4 hours. I think I cooked it too long but I was following a recipe. Maybe I’ll try London broil or flank steak next time.

Chicago beef is the best steak sandwich and I can drive to Philly. Portillos is one of my favorite places to eat at in the country.

In the Italian market by my house they do a fried chicken or fried eggplant cutlet. Served room temp with fresh buffalo mozzarella, roasted red peppers, fresh basil rough chop and a balsamic glaze sauce with ev olive oil on the roll. It’s a $15 sandwich but it can be shared. So good.

If you ever see Primo Hooagies they make all this stuff. They are from Philly but moving everywhere.
