Cakes and desserts
« on: January 23, 2023, 10:40:41 PM »
I have been having a bit of fun baking some cakes lately

There’s people from everywhere on here, what are some good cakes to make that not everyone would have heard of

Looking for inspiration, recipes would be good but even just the names of the cakes so I can google

I’m more into tea cakes and pound cakes, stuff that doesn’t need icing but any cake ideas would be good

Been doing Madeira cakes lately I love that stuff, just been throwing candied lemons on top no icing

Also rate apple tea cake and chocolate pudding they are super easy

What else??

I've been fantasizing about the elusive red velvet cake lately. A good one is out of this world to me.

I also love when I can score a carrot cake that has a little carrot made out of frosting on top.

I don't know many exotic ones but I would be down to eat most cakes I think.

I’ve been hellbent on the idea of coffee jelly over the past couple weeks. Not because I think it’ll taste good just the idea of coffee in jelly form sounds like something from another dimension. If I end up making I’ll post results on how it went.
Can someone explain in Fortnite terms?

All I know is the aldi cake with apples and nuts is too good.

I am not trying to make too many sweets but thanks for every recipe posted here. My son is too big to just feed sugar to rationalize my sweet tooth needing to be fulfilled with all the ice cream and pastries I buy.

Big fan of this one. Simple little coffee cake.

I’m gonna make that one now, thanks maaate

Edit

I might have fucked it I didn’t read it properly and assumed to mix butter and sugar, turns out you kinda make buttermilk and mix it through but we’re gonna find out

I’ll make one properly tomorrow and compare
Also I didn’t have breadcrumbs to coat so be good to do it all like it says in recipe

I pretty much only do involved pastries for special occasions these days. But, I’ll make a bread pudding every month or so. Super simple, cheap, versatile, and tasty.
Just cube up a loaf of white bread (Hawaiian rolls or challah are my go to) and let it sit out overnight. Maybe throw it in the oven on low to get super dry.
Look up any basic  recipe on google. I always sub heavy cream for milk and add an extra yolk or two.
Last one I did was with some brown butter pears and cardamom.

Also love fuckin around with mousses and bavarians. Touille’s(sp?)are fun once you figure out how to make them. Basically fortune cookie dough that’s pliable while hot and you can make little cookie cups to put your mousse, or whatever, in.
Usually do a pumpkin mousse with a ginger cookie cup for thanksgiving. Basically fold a can can of pumpkin pie filling into whip cream and sweeten it a little. Shit’s boss.

Raw cakes are where it's at. I made a sick cashew and date cake for a friend's 30th with a walnut/pistachio base. You just soak the nuts over night and blend it the next day, and add in some vanilla, maple syrup or honey. Lay the walnut base down first then the cashew mixture on top. Still has a fair amount of sugar but nothing that bad/refined and you get healthy fats and protein from the nuts. Plus no egg or dairy so vegan friendly too.

Last Sunday I didn't want to go to the bakery to bet some bread for breakfast. Decided I'd try to make some pancakes instead. Never did them before.

1 cup of flour.
A bit more than 1 cup of milk or whatever (I guess water would do just as well)
Around 1 or 1.5 tablespoons sugar
Around 1 teaspoon of baking soda

Mix it all together

Put some vegetable oil in a pan and heat it up

Put a scoop of dough in the pan. Turn the pancake once it starts to get bubbles from the heat.

Turned out great and leaves tons of options for further refinement.

Last summer at Cold Stone they had some Mario themed items and one of them was cake batter ice cream, blue frosting and rainbow sprinkles in a Mario cup and I almost cried because those are literally all of my favorite things in one.
