Air Fryer breakfast potatoes:

4-6 potatoes (depending on size), cut into cubes
1-2 tablespoons of butter, melted
1 chopped bell pepper
Salt and pepper
Fresh rosemary (I just gather from around my neighborhood and backyard and dry it out in brown bags)

Toss all ingredients together on the tray. Don't chop too many potatoes or else it would cook as well. Large chunks of potatoes take longer to cook and don't get as crisp and pieces between ~5-10mm in size. Set the air fryer to 410f, cook for eight minutes. After eight minutes, remove and mix everything else. Back in for another eight minutes, repeat that process. Back in one final time for ~5-6 minutes to roast all the final edges and make sure everything is thoroughly cooked.

Serve with scrambled eggs.

Do you recommend peeling the skins for this or it doesn't matter?

Here's one I used to do pretty regularly. Just a basic sugar cookie recipe, and I didn't even bother with baking soda or eggs, just butter, sugar, and flour (I think, I could be wrong. Basic sugar cookie recipe.) Eyeball it and mix that shit up, to taste. Make sure you taste it constantly. And keep tasting it. When you've finished tasting the first bowl, make a second bowl and make sure it tastes as good. Dump it into a ziploc bag and cut one of the bottom corners off. Now you have a piping bag. Squeeze out dime to penny sized portions onto a cookie sheet (I'd use parchment paper) and bake at 350 or so until they brown a little. Shouldn't take long, maybe five minutes. Let cool thoroughly while making sure to taste as much as you can. Make a whole bunch more. Put in a bowl and pour in milk and you're having pretty damn good cereal. If you're feeling adventurous you can add chocolate chips. Pulse them in a food processor or put them in a bag and pound the fuck outta them with a mallet or a brick or whatever you got.
