i generally like the flavor more, and holds up to being made spicy... but the soft boiled egg is my favorite part of a ramen bowl and pho generally doesn't come with egg

yeah i dont fuck with the bean sprouts (really just want the lime and basil) and think of pho as a cheaper soup than ramen. But 10-12 bucks for a bowl big enough to put your head in is the move sometimes.

but luckily i can have nuanced opinions and want different dishes at different times

I like both. the ceiling for ramen is higher but the average for pho is higher. So kind of a tie.

In that case:

I made ramen from scratch a few times, every step from the base ingredients including alkaline noodles. I don't think I'd ever attempt pho (I think the noodles might be harder to make?).

South East Asian food, from base ingredients will fuck with your head sometimes. Maybe not so much with pho, but proper thai curry and viet salads etc will really get you tie you in knots when trying to get the balance right.

Plus proper pho with all the good offal? You know how hard it is to get tendons, brisket fat, and rare beef right in a final dish. GTFO. Pho is superior.

Anyway, I fuck with Bo Kho more than either.

I knew about gazpacho but never heard about this before and it sounds delicious. Definitely gonna make this sometime.
