I just made a pesto-stuffed pork tenderloin. It sounded like an Applebees -inspired dish, so I didn't have much hope for it, but it turned out better than expected.
In a cast iron skillet, I seared the tenderloin briefly on all sides, so that it was basically still rare except the outer 0.5cm. I took it off the skillet and let it rest for 5 min so I could touch it. I slit it lengthwise down the middle and spooned in some homemade pesto with basil from the garden. I topped it with freshly shredded parmesan and put it back in the cast iron skillet and into the 350f oven for 25 min. I did it.
